Mum’s Fruitcake
SOURCE: Mum’s recipe
PREPARATION TIME: 15 min
COOKING TIME: 30 min or until done
CUISINE: Croatian
INGREDIENTS:
3 eggs
250 g butter
8 tbsp sugar
1 tbsp vanilla (or 2 – 3 sachets of vanilla sugar)
0.5 kg all-purpose flour
13 g baking powder (or 1 sachet)
2 dl milk
fruit chopped into small pieces (we used loads of peaches and nectarines, and a little apple and banana)
METHOD:
1. Cream the eggs, sugar, vanilla and butter together.
2. Mix in the baking powder into the flour and sieve. Add to the egg mixture.
3. Add milk slowly, until you achieve dropping consistency.
4. Stir in the fruit.
5. Bake at 180 C. To see whether the cake is done, insert a sqewer or a toothpick into it. If it comes out clean, it’s done!

Verdict
Delicious! When I lived at home, this was one of my favourite cakes. Soft, moist and tasty, with delicious pieces of fruit, it’ makes an excellent breakfast treat. It is incredibly easy and quick to make – no excuses not to try! 🙂
This is quite a bit of cake. I will have to check baking tray measurements with mum.

/ 29 January, 2010Hi Paula Jo. Mum says she used a 25 x 35 x 6 (all in cm) tin. My mum has never made a small cake in her life, you see! She thought my British tins were all tiny when she saw them, and went out to buy a huge 25 – 30 cm round tin for making a cake!
