What’s better than getting a sudden inspiration for a delicious, and more importantly quick, lunch when you are positively starving? Not many things, I dare say!
Today, I had a sudden flash of inspiration while I was cooking up my speedy meal solution – pesto & pasta. I normally end up eating something like this when I have absolutely no food in my cupboard. I always have some pasta and pesto though! This recipe is extremely easy, and it can be doubled, tripled or quadrupled as you wish! Add some toasted pine nuts and fresh or boiled veg if you have any. Green beans, cooked broccoli, stir-fried or grilled courgettes would work really well. There’s plenty of space for inspiration!
Feta & Pesto Pasta with Lemon
RECIPE SOURCE: Momentary Inspiration
COOKING TIME: 10 – 15 min
Serves 1
Ingredients
2 tbs pesto
50 g feta cheese, cubed
lemon zest
lemon juice
fresh basil leaves
pasta
Method
Boil the pasta according to instructions on the packet. When the pasta is al dente, add pesto, basil, feta and lemon zest. Sprinkle with fresh lemon juice according to taste. It’s that easy! And delicious!
