This is a simple but delicious salad eaten quite often in my home in Croatia at this time of year. It is seasoned with a simple vinaigrette made of olive oil and red wine vinegar, which is commonly used with salads. It can be enjoyed hot or cold, and it can be prepared in advance. You can even take some for lunch!
Green bean and egg salad
Ingredients:
250 g fine green beans
2 eggs, hard boiled
wine vinegar
olive oil
salt and pepper
Method:
Boil the beans until al dente. Slice the eggs roughly and add to the boiled beans. Season with red wine vinegar, olive oil and salt and pepper. Enjoy!
